Light Garlic Cream Sauce - 9 pts

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter -- 3/4 " thick

3 medium garlic cloves -- minced

1/2 cup milk, 2% lowfat

1/2 cup half and half

1/8 teaspoon freshly grated nutmeg

1/2 cup grated Parmesan cheese -- finely grated

1/2 cup peas -- fresh or frozen

8 ounces dried pasta -- fettucine or spirals

 

Put several quarts of water on to boil for the pasta. Melt the butter in a small

skillet over low heat. Add the garlic and saute stirring often, until just

beginning to brown. Whisk in the milk and half-and-half. Add the nutmeg (freshly

grated makes all the difference). Cook about 10 minutes, whisking often.

Meanwhile, cook the noodles until al dente. While they are cooking, whisk the

Parmesan into the sauce. Stir in the peas and heat through. Toss the cooked

noodles in a warm serving bowl with the sauce. Serve immediately.

 

Makes 4 side dish servings.
