Guest guest Posted July 17, 2008 Report Share Posted July 17, 2008 * Exported from MasterCook * Penne Piccoline con Radicchio - Tiny Penne with Radicchio Cream Sauce Recipe By : " Pasta Fresca " by Viana La Place and Evan Kleiman Serving Size : 5 Preparation Time :0:00 Categories : Quick Spicy Veggie Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup extra virgin olive oil 1 large garlic clove -- peeled and minced 2 small dried red chile peppers -- crushed 2 heads radicchio -- or 4 heads Belgian endive, trimmed and chopped 1/4 cup imported Italian canned tomatoes -- pureed salt and freshly ground pepper to taste 1 cup cream 1 pound penne piccoline -- small penne pasta 1 tablespoon chopped Italian parsley freshly grated Parmesan cheese Combine the extra virgin olive oil, garlic, and red chile peppers in a large saute pan. Saute over low heat for 2 to 3 minutes. Add the radicchio or Belgian endive, mix in flavored oil, and cook over medium heat until soft. Add the pureed tomatoes, salt, and pepper, and cook until sauce thickens. Add the cream and simmer until liquid reduces to a sauce consistency. Serves 4 to 6 " We sampled this dish in a Roman restaurant, Grotte del Teatro di Pompeo, which included on its menu specialties from Trevisio, the owner's hometown in northern Italy. The sauce was a subtle blend of slightly bitter radicchio, hot red chile pepper, and sweet cream. After the meal the owner brought his own special reserve of homemade grappa with marinated apples and offered it, strong and tonic, as a fitting ending. Try to find the tiny penne piccoline, which are pretty and delicate-looking.
