Wait--Rice Dream has gluten? Great, just great. Can someone please tell me

what to look for on the label? I thought I was doing so well with gluten

and was wondering why I'm not feeling better. Maybe this is why.

Shelley Case's Gluten-Free Diet says that Rice Dream " is made from

rice but the enzymatic process utilizes a barley enzyme. Even though

this enzyme is discarded after use, the final beverage may contain a

minute residual amount of barley protein (0.002%) " .

Hey LaDonna... what do you think of that soy-A-Joy machine??

 

I've never made my own soy or rice milk... but the idea (on a frugal as

well as a learning a new cooking trick) is intriguing !

My understanding of the whole Rice Dream issue is

their use of enzymes derived from barley. If you look

closely on the package somewhere it has a statement of

gluten content. It isn't on the ingredient list. It

claims to have less than .006 percent of gluten (the

sensitivity of a gluten assay).

 

I think I read about it on one of the not for profit

(.org) gluten web sites (csaceliac.org perhaps).

 

If you live close to a Trader Joe's they are a good

source for GF products, including GF rice milk. Whole

Foods stores sometimes have GF listings at the

customer service counters, however, you can't take

them with you. Wild Oats publishes their GF offerings

in a nice full color booklet.

 

My friend Karen goes food shopping with her cell phone

and calls manufacturers who list their toll free

numbers and inquires about gluten content.

 

If all else fails try " Better than Milk " rice milk

powder.

It isn't on the label, it is a part of a propietary recipe so they do not need

to close it. They do, however, state that their product is NOT GF. Some of

their frozen treats are though.

 

I believe Pacific Rice Milk is GF, but I have not been able to get any in my

part of Canada

This recipe is from the files.

 

 

 

Rice Milk

 

 

1 cup cooked brown rice

2 cups water

1 tablespoon (3 tsp) maple syrup

1/2 - 1 teaspoon pure vanilla

 

 

Blend ingredients thoroughly. Strain using a large meshed sieve and

again using a fine meshed sieve. Bottle and refrigerate. Shake before

use if milk has settled.

the recipe for rice milk that I came up with while making baby cereal.

I discovered that if I used brown rice flour and cooked it like I do

for the baby, I didn't have to strain out the rice bits.

 

1/2 c. brown rice flour

3 c. water

1 T. honey or maple syrup (optional)

dash vanilla (optional)

1 T. oil (optional)

 

Cook 2 c. of water and rice flour into a porriage like consistancy.

Pour porriage into blender or shakable container and add the rest of

the desired ingredients, use more water if you want a thinner milk.

 

This can also be used like cream depending on how thin or thick you

make it

 

I find this very easy and convienent, partically because I am making

rice cereal anyway.

About these cravings, I don't know what it is about the clam chowder,

but I craved that through all 3 of my pregnancies. With the first one

I ate a lot of it (and couldn't figure out why I was always more sick

after). With the last two, corn chowder worked fine, if I could get

the consistancy right.

I'm allergic to milk and I never could stand it either. I'm not crazy about soy

milk, I use enough to wet the cereal. Why don't you tell him to buy a box of

rice milk and see if he likes it. The boxed rice milk is fortified with

vitamins. My Mom used to make me rice milk by boiling rice in water and

straining it using a mesh strainer. Add a cup of rice and something like 4-1/2

to 5 cups of water and let it boil until the water is milky looking.

remember that?

 

i have a friend who can not drink milk, finally at age 59 he found out why

milk always made him sick and why he never liked it . . .

 

we tried soy milk which he can drink but really didn't want to like all that

well so perhaps rice milk will do?

If he has a soy milk maker, it can be used to make other kinds of milk

too. I agree with Donna that he should try buying some first. I also

love vanilla oat milk. Yum. But you can use a soymilk maker to make

all sorts of milks, including almond milk, or combination milks. Mine

came with a recipe booklet of all different kinds of milks that it can make.

 

I make my weekly batch of soy milk, but I only use 1 cup per day. :-)
