Grilled Summer Squash Roll-Ups with Mediterranean Olive Filling 4 small yellow summer squash and/or zucchini, sliced lengthwise into 1/2-inch slices olive oil for brushing fine kosher or sea salt and pepper to taste Mediterranean Olive Filling: 1/4 cup chopped Kalamata olives 1/4 cup chopped green olives 8 ounces crumbled feta cheese 1 tablespoon olive oil 2 tablespoons toasted pine nuts 1 teaspoon grated lemon zest Prepare a hot fire in a grill. Brush the squash strips with olive oil, then season to taste with salt and pepper. In a bowl, mix together the Mediterranean Olive Filling ingredients and set aside. Get good grill marks on both sides of the squash slices, about 1 to 2 minutes per side. When they're still warm from the grill, place about 1 tablespoon of the olive filling on the end third of a grilled squash slice and roll up. If you wish, secure each roll with a toothpick.
