Zelda,

I personally love the recipe ON the Bush Chili Beans CAN. It is delicious. I

substitute 1 - 20oz. can of Worthington Vegetarian Burger for the ground b " " f. ,

brown it in a little oil, and use the large can of Bush chili Beans.

Vegetarian Chili Recipe?

 

 

I am looking for a good recipe for vegetarian chili. I looked in the recipe

file but didn't see anything there.

I made this one time... got it off the food network website....

DEEELISH!! The cashews give it a meaty texture.

Ultimate Veggie Chili Recipe courtesy Anne Tegtmeier, Windsor, CT

 

 

 

 

 

1 yellow onion, chopped

1 red bell pepper, chopped

3 cloves garlic, minced

2 tablespoons olive oil

2 teaspoons ground cumin

1 teaspoon each chipotle chili powder and red pepper flakes

14 ounces extra-firm tofu, frozen and thawed

2 (14-ounce) cans diced tomatoes, undrained

1 (28-ounce) can crushed tomatoes

1 (4-ounce) can diced jalapenos, drained

1 (4-ounce) can green chiles, drained

2 (14-ounce) cans black beans, drained and rinsed

1 (14-ounce) can dark kidney beans, drained and rinsed

1/2 cup frozen corn

1/2 cup whole roasted cashews

Salt and freshly ground black pepper

Garnishes: sour cream, shredded Cheddar, more roasted cashews, optional

 

In a large stockpot, saute onion, bell pepper, and garlic in the olive oil over

medium-high heat until onions are starting to soften. Stir in cumin, chipotle,

and red pepper flakes. Crumble the thawed tofu into the mixture and saute 5

minutes more.

Reduce heat to medium. Add all tomatoes, jalapenos, green chiles, black beans,

kidney beans, corn and cashews; mix well. Reduce heat to low and simmer for 1

hour, stirring occasionally. Add salt and pepper, to taste.

 

Garnish with sour cream, grated Cheddar, and additional cashews, if desired.

how do you access the folders? (sorry if this is a novice question)

 

corollary... how do you load files to the folders? do you need a special

access?

Under where it says Home & Messages, over there to the left <--------

you'll see the word Files. Click that & then click on Recipes and

there they are. :) The moderators file the recipes that are posted

here in the group so if you want to share, just post it and it'll get

filed.

Here's one I found . . . Though not exactly the one I was looking for. I'll

keep looking, but this one sounds interesting!!

No meat is added in here! Instead an interesting ingredient that has the

texture of ground meat...bulgar wheat!! Also, there is pumpkin that makes

this smooth and creamy with lots of vitamin A. Who can ask for anything

else?? This came from Woman's Day magazine (May 2008)

SERVES 6 , 6 cups of chili (change servings and units)

 

 

Ingredients

5 1/2 cups water

3/4 cup Bulgar wheat

2 teaspoons olive oil

1 cup chopped onion

1 cup red pepper

2 tablespoons sodium-free chili powder

2 teaspoons minced garlic

2 teaspoons ground cumin

1 (28 ounce) can crushed tomatoes

1 (15 ounce) can 100% pumpkin puree

1 medium zucchini, diced

1 cup frozen corn

1 (15 1/2 ounce) can low-sodium black beans, rinsed

1/2 cup chopped fresh cilantro

Directions

Put 3 cups of the water and the bulgur in a medium microwave-safe bowl.

Cover and microwave on high until bulgur is tender, about 15 minutes.

Meanwhile, heat oil in a large nonstick skillet. Add onion and pepper; sauté

5 minutes. Add chili powder, garlic and cumin; sauté until fragrant.

Add remaining 2 1/2 cups water, the tomatoes, pumpkin, zucchini and corn;

bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes,

stirring occasionally, until vegetables are tender.

Stir in beans and bulgur; heat through. Remove from heat and stir in

cilantro

Ok, this is REALLY close to what my mom used to make, and what I have been

meaning to make, but haven't gotten around to yet.

Made with bulgar wheat instead of hamburger, this is a taste treat! It

usually takes me awhile to gather the ingredients - it may not take you as

long to get ready.

SERVES 8 , 1 cup (change servings and units)

 

Ingredients

4 cups cooked kidney beans (or any other kind you choose)

1/3 cup oil

2 large onions, diced

6 garlic cloves, minced

1 large green pepper, diced (optional)

1 tablespoon chili powder

1 tablespoon ground cumin

1 teaspoon oregano

1/8 teaspoon cayenne pepper

2 bay leaves

1/2 cup Bulgar wheat

28 ounces tomatoes, chopped (reserve juice)

1 tablespoon sugar (optional)

1 tablespoon soy sauce

3 cups water

1 teaspoon salt

1/8 teaspoon pepper

2 tablespoons butter

1/2 cup onion, for serving if desired (optional)

Directions

1

In a large pot, sauté onions and garlic and green peppers in oil.

Add chili powder, cumin, oregano, cayenne, bay, & bulgur.

Cook for two minutes, stirring to prevent burning.

Add tomatoes and juice and sugar.

5

Add beans, soy, water, salt & pepper.

Cook on low heat for at least 30 minutes.

Add butter just before serving.

Serve topped with onions, if desired.

The original recipe came from a vegetarian cookbook. I added the optional

ingredients.

I like it topped with grated sharp cheddar cheese.

Thanks for this. I got several really nice recipes from this site. I am

trying to find just THE chili recipe and trying a bunch of different ones until
