Guest guest Posted July 27, 2008 Report Share Posted July 27, 2008 With all the zucchini coming in (fast and furious!) my dear friend Amy gave me a quick and easy recipe. It tastes pretty good too! (not vegan) Zucchini Rounds 1/3 cup Bisquick 1/4 cup parmesan cheese 1/8 teasoon pepper 2 eggs or sub 2 cups shredded zucchini 2 Tbsp mixture for each round. Just drop onto hot oiled skillet and cook until golden brown. I add more seasonings just b/c I love them. You can also experiment w/ adding different veggies.
