Yellow Zucchini & a recipe

You use them the same as the green ones. Aren't those yellow one pretty?

Deanna submitted the following recipe recently and I can't wait to try it out

with some zucchini.

Zucchini Rounds

 

1/3 cup Bisquick

1/4 cup parmesan cheese

1/8 teasoon pepper

2 eggs or sub

2 cups shredded zucchini

 

2 Tbsp mixture for each round. Just drop onto hot oiled skillet and

cook until golden brown.

 

I add more seasonings just b/c I love them. You can also experiment w/

adding different veggies. I've tried onions and mushrooms but too much

changes the consistnecy of the pattie.Judy

Yellow Zucchini

 

 

Group,

I have a question, think I know the answer, but want to hear from all

of you too. I just bought some fresh zucchini from a couple of little

kids down the street. They are yellow in color. I always knew

zucchini to be green. Now is yellow more like a squash type? Do I

use the yellow the same as I would the green? DH was saying the other

day how zucchini bread sounded really good, would the yellow work?

What I like about yellow zucchini is that they have a less watery

texture than the original green zucchini. I like the idea of the

recipe [below]. However, I have a gluten allergy so I will have to

figure out if there is an equivalent gluten free biscuit mix

available that I can use to make this recipe.

I can vouch for the fact that zucchini bread recipies made with yellow squash

turn out fine.  The Crust comes out a little different, but actually it was a

good difference.  I always make it with yellow wummer squash because I can eat

that, but am allergic to zucchini.

What brand of Gluten free mix did you use to make the zucchini bread

recipe or are we talking about different issues? I am not allergic

to any squash, but have a gluten allergy which means no wheat,

barley, or rye.
