Deanna submitted the following recipe recently and I can't wait to try it out with some zucchini. Zucchini Rounds 1/3 cup Bisquick 1/4 cup parmesan cheese 1/8 teasoon pepper 2 eggs or sub 2 cups shredded zucchini 2 Tbsp mixture for each round. Just drop onto hot oiled skillet and cook until golden brown. I add more seasonings just b/c I love them. You can also experiment w/ adding different veggies. I like the idea of the recipe [below]. However, I have a gluten allergy so I will have to figure out if there is an equivalent gluten free biscuit mix available that I can use to make this recipe. The Crust comes out a little different, but actually it was a good difference. I always make it with yellow wummer squash because I can eat that, but am allergic to zucchini.
