I often freeze soups, but this one contains pasta and I'm not sure how well that would work out. (It also contains beans and lots of veggies, but I know those would be fine.) The pasta (I used medium shells) gets a little mushy but other than that eveything was yummy. I make a HUGE pot of soup Thursday night and it was SO delicious that my two daughters and I polished off the entire pot on Friday. They've asked me to make another pot today. If you are interested in the recipe, it has more than 700 reviews on allrecipes.com. It is SO good! I used to love the Vegetable Minestrone by Progresso and this is like that, but better. My kids eat it with a bit of parmesan sprinkled on top, but I use nutritional yeast. I will be making it again this weekend and, hopefully, I will have some to freeze this time.
