Question of the Week - What do you do with your excess summer produce?

 

Sometimes we buy more than we can eat before it spoils, our gardens are

producing more than we can eat fresh, or a friend gives us some from their

gardens. How do use it, cook it, bake it, preserve it or share it?

 

I know that we all enjoy hearing your replies to our QOTW.

So far we have had no excess from the garden. The sugar peas and beans get ate

as soon as they are picked and there is not enough to pick at one time to do any

canning.

 

I only buy enough produce from the grocery store for the meals of the day. So,

no excess there.

 

I will have excess of some things from the garden soon. I look forward to

hearing what good ways to save them are.

Hello I am new to the group. In responds to the question of the week, I can

it or share with others. My household has become smaller and I am constantly

over estimating how much food we need for the week, so I can what we don't

need and use it in a future week or share with others in the Master Food

Preservers group I belong to.

I will make soup and freeze. If it's squash I will make sweet breads from it,

if tomatoes then spaghetti sauce, onions then a white pizzan if it " s ginger then

I grate and make ginger cookies, celery then I make celery casserole, . I eat

up everything I buy. If I have to then I will eat a vegetable breakfast.

I freeze things like berries that I buy in large quantities when I find them for

a great price. They are great for making pies, muffins, thawing to go over dry

cereal and ice cream and making smoothies with, stewing fruit to go over toast

or hot cereals.

 

Corn, I par boil it and put in freezer bags or slice it off the cob with my

mandolin and par boil it and freeze in freezer bags. I love par boiled corn in

many salads. So sweet and tender.

 

Tomatoes I love to make all kinds of salads with, sauces and tomato gravy.

Share with friends.

 

Cucumbers - share excess with friends, but we eat a lot in different salads.

Boy I need to make some tabouli.

 

Bell Pepper, never have excess on those. We use in stir fries, eggplant dishes,

Italian dishes.

 

Basil - and other herbs, I snip it off and put in sandwhich zip loc bags and

send with my husband to work for folks I know that enjoy cooking and would enjoy

that. It is so nice to have it in pots on the patio for using when I cook.

 

Soups is what I love to use up veggie in, all times of the year.

We eat as much as we can. Give some to other people. And I take and freeze

things for winter soups and stews! I use to can things too, but now I try

to do things and use them up or give to those in need.

I forgot about that. I do make a lot of dishes up and give to people.

I don't waste food, I cook up everything I buy.

It was that thing growing up, " you need to eat everything on your plate, there

is someone in the world starving " well it worked on me, I even ate my sisters

leftovers because that sentence didn't work on her.

We eat as much of it as we can. I do some canning, some freezing,

some drying. We still have plenty. I give a lot to some of the

larger, less fortunate families at my church. I even had " free

zucchini day " for my piano students already this year!

Well, it depends on what kind of veggies I have. I love to make soups but

recently I have discovered I can throw just about anything into a veggie

quesadilla and it tastes great. And sometimes when I'm feeling lazy, I will

throw stuff out into the yard for the critters. I love feeding the birds,

squirrels and chipmunks.

Depends on what it is. I have several fruit trees. I love the lemons

(Eureka and Myers) since they have all stages in the tree, a few ripen

at a time throughout the year so I never have an excess. The limes

give fruit for about 6 months or so. The oranges, grapefruits and

minneolas are a different story. They all ripen at once. I have a

giant minneola tree, so I have taken weekly bags of minneolas on my

bike panniers to work, emailed all my friends to come pick some up,

you name it! With the juicing oranges I froze the juice and I have

been enjoying it, still have some in the freezer. One of the trees

that have more bitter oranges made excellent marmalade. I do what I

can, freeze, can, dry, and try to give fruit and veggies away to

friends and neighbors.

 

Tomatoes are not too abundant this year, but the peppers are doing

great. Last weekend we pickled a few jars, yet another preserving

technique I had not done before. I tried one of them yesterday and it

was very good. Pickling was not a lot of work, I found it pretty easy

to do. We did not can, just made enough jars to refrigerate.

 

Now I have lots of nectarines all ripening at the same time, and also

peaches. Unlilke the citrus, they do not travel well (taking a bunch

to work is not an option). I have made a fruit spread with the

nectarines, dried a few, and I have been washing, cutting, bagging

and freezing more of the nectarines and some peaches. There was some

talk yesterday about nectarine sherbet or gelato.....I still have to

figure out how. I can also use them in smoothies and in pies and

cobblers, or maybe I'll make jam. I can decide as the occasion

arises...I am also freezing figs, not sure how I will use those yet.

 

You can all imagine I never have to buy fruit at the store (we grow

all our vegetables too). True, but from time to time I crave a banana

and we have not managed to grow them (yet).

I want to thank whoever, I believe it was Donna, said that they have

vegetables for breakfast so they don't go bad. I was looking around

this morning wondering what to do for breakfast, and I got this great

idea thanks to the group. I toasted a bagel, put a little bit of

cream cheese on it, then I used up some veggies from my garden. I

used tomato, onion, green pepper, banana pepper. It was so yummy.

Now I'm sad that was my last bagel.

I try to buy just enough to eat up but if there is extra I will dice up

and saute and add some soy sauce and eat on top of rice. I make soup

too. I'm big on a veggie omlet with ketchup

I shop on Sunday so Thursday thru Saturday I scramble around the

kitchen making a vegetable soup, if I have extra apples, peaches, pears

I will make a crisp to enjoy. I freeze grapes for a summer snack. I

freeze extra herbs to drop into soups at a later date.

It was very yummy. I decided to make one for lunch today using my

double fiber bread. No cream cheese this time, just the bread and

veggies.

I wuill dice up veggies and make fried rice with them or soups. I add

them to stews and chili's or I cut them up and make dip and have a lite

lunch with them. I will eat most any vegetable raw.
