Nutritional Yeast VS Parmesan Cheese

Try it and see what you think.  There is no perfect sub for Parmesan.  This

nutritional yeast is sort of close but it isn't the same thing.  Don't expect

too much and you might be pleasantly surprised.

I just got the recipe below from our files... I am trying to eat vegan so do you

all think it would be ok if I substituded the parmesan cheese with nutritional

yeast??

Onion Crisp Casserole

 

5 large brown onions or Vidalia, peel and slice into rings

1 stick of butter ir margarine ( don't use the whole stick, about 3/4 of it

Parmesan cheese

Crisp buttery crackers like Hi Ho or Keebler, crushed

optional-chopped hot pepper

 

Saute the onions (and hot pepper if using) in butter until they are soft.

Pour 1/2 the onions into 1 1/2 quart casserole, cover with parmesan cheese and

then 1/2 the crackers. Repeat the layers and bake uncovered in 325 F. oven until

In this new cookbook I just got, it recomends the vegan Parmasean alternative -

Soyco Rice Parmasean - I've not tried it before, but one review I read said

this " it tastes *exactly* like that Kraft Parmesan 'grated topping' in the green

can. " They said they found it at the health food store.

This new cookbook is called The 30-day Diabetes Miracle Cookbook.

The recipes look great and it is put out by the Gourmet Kitchen and Cooking

School at Lifestyle Center of America. It is all vegetarian and is vegan.
