This is my wife's preferred method of eating butternut squash.

I tried doing this with a stuffing I mixed up once and she didn't

like it that much. I'm not a big butternut squash fan so I like

a little more (like the stuffing). However I'm still searching for

a recipe we can both agree on. Hm, she doesn't usually add

the garlic. I'll have to mention that to her.

Anyone have recipes for what a person who lives alone can do with it??

I cut it in half take out the seeds, put some oil on it and tuen it

upsidedown on a baking pan and bake until done. Then I mash it down

and put lots a butter and salt on it. Course you could add some

cinnamon and brown sugar instead. My Gramps likes it with the cinnamon

and brown sugar but I likes the butter and salt way.

I cut in 6th and steam it and eat with a sprinkle of herbs and some butter or

you can roast it or use it steamed to make a pureed soup. There are quit a few

soup recipes in the soup folder.

I love to Roast it with carrots. Peel, seed and chop up butternut squash

with some carrots cut into small chunk, then add a little olive oil and

some coarse salt. Toss it all together and lay out single layer on a baking

sheet and bake for about 25 minutes on 425 degrees F. or until tender and

lightly browned and crisp on outside.

There are lots of recipes in the squash folder and many times one winter

hard squash can be switched out for anther in a recipe.

so just enjoy browzing and finding one you want to make. I've had some

great recipes from this site. Read the reviews on the recipes and look at

the stars to find the best ones, of course all our taste buds are different,

but I'm sure you'll find something good to make with it. Let us know which

recipe you used and how it turned out.

we open them in either halves or quarters.  stab the skin with a good small

knife.  place in the micro along with a very small ramekin full of water.  cook

for about 7 min. -depends on size!-  some people place a small piece of butter

on top.  gloria

Shred it (peel first if not organic), put it in ziplock bags and

freeze it. You can then use it in sweet breads, cakes, cookies, etc.

I also like to saute it in a little butter with some onion, salt a

pepper. Sometimes I add a little cinnamon.

 

Enjoy! I love butternut squash!

I like it roasted and just before I take it out of the oven I put

about 1 Tbs of brown sugar or maple syrup and 1 tsp of cajun spice mix

in the cavity and put it back in the oven until the sugar melts. YUM
