This is my wife's preferred method of eating butternut squash. I tried doing this with a stuffing I mixed up once and she didn't like it that much. I'm not a big butternut squash fan so I like a little more (like the stuffing). However I'm still searching for a recipe we can both agree on. Hm, she doesn't usually add the garlic. Guest guest Posted August 11, 2008 Report Share Posted August 11, 2008 I cut it in half take out the seeds, put some oil on it and tuen it upsidedown on a baking pan and bake until done. Then I mash it down and put lots a butter and salt on it. Course you could add some cinnamon and brown sugar instead. My Gramps likes it with the cinnamon and brown sugar but I likes the butter and salt way. There are quit a few soup recipes in the soup folder. Peel, seed and chop up butternut squash with some carrots cut into small chunk, then add a little olive oil and some coarse salt. Toss it all together and lay out single layer on a baking sheet and bake for about 25 minutes on 425 degrees F. or until tender and lightly browned and crisp on outside. You can then use it in sweet breads, cakes, cookies, etc. I also like to saute it in a little butter with some onion, salt a pepper. Sometimes I add a little cinnamon. Enjoy! I love butternut squash!
