packed lunch ideas?

Salads are my daily choice or soups and always lots of variety in ingredients:)

also two fruit to snack on and a vegetable snack like carrots or broccoli.

It's time to pack my lunch again, we don't have kids and my husband takes the

same lunch

every day, but I'm looking for ideas. Those of you that pack a lunch-what are

your favorites?

Last week I had hummus bowls - a layer of greens from the garden

tossed with balsamic vinegar, a big blob of hummus, 1/2 a med

zucchini, sliced, and assorted deli olives and pepperoncinis. Oh, and

some hot & spicy pickled string beans - Mucho thanks to whomever

posted that recipe - the beans were great!

 

Next week I'm having fajita bowls - a layer of greens tossed with hot

sauce, maybe some mexican rice, fajita mix incl onions, peppers &

portis, topped w salsa & maybe some cheese.

 

Another fave lunch is an asian bowl - a layer of greens, baked brown

rice, 2 or 3 slices of baked tofu and sometimes some stir-fried veggies.

 

And I have various Green Grain Bean bowls which are any green with any

grain and any bean with whatever veggies or spices I'm in the mood

for/have on hand.

 

I pack my lunches for the whole week on the weekend so all I have to

do in the morning is grab one, stuff it in my bag and stagger to the

ferry so I can go back to sleep for an hour. :)

Melissa,

 

here's my favorite sandwich and it freezes well. I make up about 10

or 11 sandwiches and freeze them individually. In the morning just

grab one and go. It will be defrosted by lunch time.

 

Tofu Salad Sandwiches

 

6 Tbs. plai low-fat yogurt

6 Tbs. mayonaise

t tsp. Bragg's or soy sauce

2 tsp. prepared mustard

1/2 tsp onion powder

1/4 tsp. garlic powder

1/4 tsp. celery powder

1/8 tsp. paprika

1 tsp. honey or agave

14-oz. firm tofu, drained and mashed (2 cups)

1 cup shredded Cheddar cheese

1/2 cup chopped pecans or walnuts

 

In a mixing bowl combine yogurt, mayo, Braggs, mustard honey and

seasonings. Stir in tofu, cheese and nuts. Spread between 2 slices

of whole wheat bread, place in ziplock baggies, label and freeze.

 

After defrosting, or if eating fresh, I like to add lettuce and/or

tomato slices. Enjoy!

flatbreads too. I

slather them with homeade hummus then load them with sprouts, shredded carrots,

shopped

celery, chopped raw cashews, lettuce, lentils, chopped tomatoes, feta cheese -

basically

anything you like! I roll them up then slice them with a very sharp knife and

wrap them

tightly in plastic wrap and chill them in the fridge. Makes a great lunch!

Whole foods carries a sprouted Ezekial tortilla - I sometimes use organic

flatbreads too. I

slather them with homeade hummus then load them with sprouts, shredded

carrots, shopped

celery, chopped raw cashews, lettuce, lentils, chopped tomatoes, feta cheese -

basically

anything you like! I roll them up then slice them with a very sharp knife and

wrap them

tightly in plastic wrap and chill them in the fridge. Makes a great lunch!

This sounds like a great idea, it should also work for long flights

and car rides (and day hikes). Thanks for sharing this idea Tony.

Do you usually heat up the tortilla a little so it is flexible and you

can roll it? I was thinking about using the wheat/corn tortillas from

Trader Joe's.

Hi Melissa--

I'm a few days late on this.. but I've been looking into bento boxes

as a great, easy way to pack lunch. (A lot of the boxes I've been

looking at are kind of like tupperware, but more versatile!)

 

I've found lots of neat things from

Since the recipes are vegan, they're very applicable..

but another favorite resource is http://lunchinabox.net --she shows

quick lunches for her whole family--and considers vegetarians (though

not all lunches are vegetarians)--lots of links & tips on how to

quickly pack a great lunch.

 

I'm looking forward to packing hummus & sprout sandwiches with a side

of carrots with dip (bleu cheese + balsamic vinegrette) & Annie's

cheddar bunnies! =)
