The frozen eggplant will have drawn water so a cup might make it too soggy. You can always freeze the teriyaki sauce you have leftover. The homemade recipe for teriyaki made about 1 1/2 cups and that seemed perfect for it. Loved the flavor in that teriyaki homemade sauce.
