Guest guest Posted August 15, 2008 Report Share Posted August 15, 2008 This may be way off since I've never had baked Alaska, but the two things that keep popping into my head are that I *think* I've heard of folks using the vegan marshmallow stuff that comes in jar to get a meringue-like consistency (I've never tasted that either, so feel free to say Eeeeewwww as loudly as you like if it's a terrible idea) and a while back Bryanna Clark Grogan and Julie Hasson blogged about using something called Versawhip 600K to try to come up with vegan meringues. I'm pretty sure neither one of them has posted a recipe yet, but if you feel like looking at their posts for inspiration they're at http://veganfeastkitchen.blogspot.com/2008/06/vegan-whipped-creme-marshie-fluff.\ html and http://everydaydishtv.blogspot.com/2008/06/vegan-whipped-cream.html .. And I've, umm, never tasted the Versawhip stuff either. Potential vegan meringue ideas just tend to get stuck in my head since the awesomeness of my mom's lemon meringue pie is forever seared into my taste buds, so if you decide to experiment, I'd love to know how it turns out. It seems you can almost sub everything, doesn't it? That is such a good thing. Not only for vegans but for people with allergies.
