It's a powdered mix you combine with water to replace eggs. Besides that, 1/4 cup of mashed up tofu per each egg would probably work too. I squeeze it a bit, cut it into strips, 'paint' the strips with hoisin sauce, and 'grill' them in the microwave. I have a microwave dish sold as a grill for bacon: it's heavy plastic with ridges. I use this. This only takes about two minutes to do, start to finish, and another two minutes or so to microwave. This might be better sauteed on the stove: but I want no mess, no fuss, when I do this. I also keep tempeh in the freezer, tempeh is VERY easy and fast to cook and a high protein food. Unlike tofu, it does have a distinctive taste of its own: so you'd have to like it, I think. I do like it, I find it a very handy food to have around. Do you eat eggs and dairy products? I have been a vegetarian from childhood till now with about 3 years of eating meat from 11 to 14. I have tried many forms of eating(ie heavy pasta and salad, vegan, raw foodist) This is my best suggestion for vegie burgers. Try experimenting with brown rice (or another cooked grain)and mashed black beans. You could cook up some onions and garlicwith olive oil, some cumin, diced carrotsand celery? Grate some cheddar cheese in and form them into patties after mixing it all together? this isn't a real recipe but I'm sure it would work and be good because that is all that garden burgers have in them...although I think they use eggs to bind them/ but water and mashing with the oil might work as well... You need: 1 can black beans or equivalent dried that have been cooked and cooled 1 can corn kernels, drained or equivalent cooked fresh off cob or frozen 1 C (give or take) BBQ sauce (I make homemade from ketchup, molasses and some other stuff) cracker or bread crumbs 1 Tbsp cornstarch (you can use 1 egg instead if you want, this is just to help hold it all together) Use a food processor to pulverize the beans. Add the corn and blend again. Add the BBQ sauce and cornstarch. Use the cracker crumbs to get them to the consistency you like. They should be able to hold together and not be too dry. You can then bake or fry them. They tend to fall apart when grilled, but you can grill them using a veggie tray. They freeze great. Guest guest Posted August 28, 2006 Report Share Posted August 28, 2006 Very Veggie Burgers 3 tablespoons olive oil 3/4 cup fresh corn kernels or frozen, thawed 6 mushrooms, finely chopped 2 scallions, finely chopped 1/2 red bell pepper, finely chopped 1 clove garlic, finely chopped Dash cayenne pepper 1/2 cup chopped fresh spinach 1 carrot, peeled and grated 1 small potato, peeled and grated 1 egg white Salt and pepper 1/2 cup fresh bread crumbs In a large skillet heat 1 tablespoon oil over medium high heat. Stir in corn, mushrooms, scallions, and bell pepper. Cook for 3-4 minutes. Add garlic, cumin and cayenne and cook for 30 seconds. Remove from heat and stir in spinach. Add carrot and potato and stir to combine. Add egg white and season with salt and pepper. Stir in enough bread crumbs so that the mixture holds together. Shape mixture into 6 disks and place on a plate. Chill for 1 hour. Heat 2 tablespoons olive oil in non-stick skillet and cook veggie burgers until golden on each side. Serve on whole wheat buns.
