LEEKS GREENS

What do you do with the green part of your leeks. I know they are

tough, but I hate to just throw them away. I usually save them and

make add them when making broth, but I end up with a freezer full of

leek greens.

I don't use them. They have to really be washed well as they hold a lot of

grit. The greens are very tough and have little flavor. Donna

I dice up the 1/2 of the green part closest to the white part, wash well and it

cooks up very tender for me. I like it's color in dishes. I did this when I

made the Asparagus Leek Chowder recipe that we both liked.

I have used it as far back as the pale part but never had good luck with the

very top area. Wonder if I could grate it with the microplane. Hummm I will

try that. Maybe roll them and cut chiffonade with kitchen shear4.

I basically did like a chiffanode dice to them. I first pulled them apart a

bit, as they were still attached to the white part, to get out any dirt between

the layers. The rinse under running water in a strainer bowl, after the

chiffanode dicing, got out all the remaining grit.

That asparagus leek chowder is what has got me questioning this now.  I made it

again last night, to rave reviews again, and don't need to make vegetable stock

again for a while and don't want a freezer full of the greens.  I actually used

up into the green part, as the recipe calls for the white of 3 and I only had 2,

but it was fine.

Meant to add this - wash it in a strainer bowl and move your hands around thru

thru the diced up green part while you run water over it.

I tell you, we LOVE that recipe. It is one colorful soup. My girls are not

onion fans, so they were very surprised with how much they loved this recipe.

My husband is not a soup person, but my daughters and I love any soup. I

usually fix him a nice tossed salad and grill cheese sandwich when I make soup.

LOL His father was such a lover of soups, stews and chowders, so I don't

understand how he came to not enjoy it too. Ahhhhhhhh we're all different,

with different taste buds aren't we.
