The greens are very tough and have little flavor. I like it's color in dishes. I did this when I made the Asparagus Leek Chowder recipe that we both liked. Wonder if I could grate it with the microplane. Hummm I will try that. Maybe roll them and cut chiffonade with kitchen shear4. I first pulled them apart a bit, as they were still attached to the white part, to get out any dirt between the layers. The rinse under running water in a strainer bowl, after the chiffanode dicing, got out all the remaining grit. I made it again last night, to rave reviews again, and don't need to make vegetable stock again for a while and don't want a freezer full of the greens. I actually used up into the green part, as the recipe calls for the white of 3 and I only had 2, but it was fine. My girls are not onion fans, so they were very surprised with how much they loved this recipe. My husband is not a soup person, but my daughters and I love any soup. I usually fix him a nice tossed salad and grill cheese sandwich when I make soup. LOL His father was such a lover of soups, stews and chowders, so I don't understand how he came to not enjoy it too.
