Mexican Braised Tofu - Request

Hi all,

I am new to your group and my name is Bradley.

I am looking for a recipe for how to make Mexican Braised Tofu like the kind

you can buy pre-made at Whole Foods. The brand I would like to emulate is the

Mexican Braised Tofu made by Wild Wood.

Seems they have a way of cooking the tofu that makes it firm, but not dry or

tough..

I have tried freezing and draining the tofu first then braising it but it

aways comes out dry, crumbly, and sort of tough.

 

So does anyone know how to cook tofu to that constancy (like Wild Wood's

Tofu)?

 

Any input would be greatly appreciated!

Welcome to the group Bradley.

 

I have had good success baking tofu after marinating it. It works

best to use firm tofu or even extra firm. Sometimes i marinate for a

while, like a whole day, but an hour or so will also work. Bake in 300

C (fairly low) for an hour or so. As far as the flavors, I am not

familiar with the mexican braised but just look at the ingredients

list to get some ideas. Mexican spices are peppers, garlic, oregano,

cumin, coriander, cilantro....lime maybe? ground up chipotle would be

good too. You will need to experiment with a 'Mexican' flavored

marinade. Good luck!
