You've just reminded me of The Hedge Sketch... to which the answer would obviously be " no, I'm not married " . Seriously though, for a friend - there's plans for a post solstice celebration, and one person is gluten-free.... just to make things nice and easy!!! Guest guest Posted June 23, 2006 Report Share Posted June 23, 2006 Hi Peter LOL - I wish I could remember a line to go with that one - it's a while since I watched it, and my brain is not the size of a planet :-) I tried looking on the internet and found what I think is a good online vegan gluten free deserts and cakes book. The trouble is our Adobe Acrobat is not new enough for me to download the nice version with pictures. I have managed to download the text version which is a bit messy to read but okay. There are quite a few recipes on there, unfortunately for us Brits, it is American. Most of the ingredients are understandable though. I have noticed that spelt flour is mentioned in everyone as an alternative to a mix of other flours (rice, potato etc.) We made a cake with spelt flour and it tasted okay but was very heavy. The amount of fat and water it takes up is different to normal flour. You could try that though - especially if you were doing cookies or brownies rather than a cake which is best soft. You can also get mixtures of flours for baking, in health shops. Our local one has several - there is a Terence Stamp one which looked quite good. That may be the best bet as it probably bakes lighter than spelt flour. Anyway the link for the free online book is http://www.vitalita.com/cookbooks.html and it is the second book mentioned. Underneath the writing there is a link to the text version, or if your pc is up to it there is the pdf version. For butter I use soy butter milk use soy milk eggs I use 2 tbl spoons of apple sauce (any fruit will work tho)and 1 tsp of baking powder Hope this helps! BB Nikki Heavenly Chocolate Cake Gluten Free Recipe Ingredients: 1 cup soy flour 3/4 cup 100-percent corn flour (cornstarch) 1-1/4 teaspoon baking soda 1/2 cup cocoa 1-1/4 cups caster sugar 2/3 cup melted butter 1 tablespoon gluten free white vinegar 1 cup evaporated milk Two eggs One mashed banana 2 tablespoons raspberry jam Directions: Grease two 8-inch round sandwich cake pans and line with baking paper. Sift flours, soda, cocoa and sugar into a large bowl and add butter, vinegar and milk. Beat with electric beater on low speed one minute. Add eggs, banana and jam and beat on medium speed for two minutes. Pour cake mix into prepared pans. Bake in moderate oven for 30 minutes or until cooked. Stand cakes in pans five minutes, turn onto wire rack to cool. Sandwich cakes together with whipped cream. Vanilla Cake Gluten Free Recipe Ingredients: 4 tablespoon gluten free margarine Three eggs 2 cups sugar 14 ounces of rice flour 3 tablespoon corn starch 1 cup milk 1 tablespoon baking powder 1 tablespoon vanilla sugar Directions: Beat margarine, egg yolks and sugar until creamy. Add rice flour, corn starch, vanilla sugar and milk, and beat for a few minutes. Add baking powder ang gently mix. Add beaten egg whites (beat egg whites for five minutes, until foamy). Preheat oven to 350-degrees and bake for 40 minutes, or until golden. NOTE: This cake is also known as Brazilian Dessert. Pineapple Velvet Cake Gluten Free Recipe Ingredients: 2-1/4 cups gluten free flour mix 3 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon xanthan gum 1 teaspoon salt Four eggs 1-2/3 cups sugar 1 cup canola oil 1 teaspoon GF vanilla Directions: Preheat oven to 350-degrees. Grease and (rice) flour a 9 x 13-inch pan or two, 9-inch round pans. Blend together all dry (first five) ingredients. In a large bowl, beat together eggs, sugar, oil and vanilla. Add flour mixture, alternating with 1-cup pineapple juice. Beat well. Add 2-teaspoons lemon juice if desired. Bake 25-30 minutes for cake and approximately 15 minutes for cupcakes. NOTE: A double recipe makes a two layer (9-inch) cake and 24 cupcakes! Frost it with a seven minute boiled icing. Gluten Free Flour Mixes: Gluten Free Mix I Ingredients: 1/4 cup Soy flour 1/4 cup Tapioca flour 1/2 cup Brown Rice flour Directions: Mix together. Equals 1-cup wheat flour. Gluten-Free Mix II Ingredients: 3 cups white rice or brown rice flour 1 cup potato starch 1/2 cup tapioca flour Directions: Mix together. 1-cup equals 1-cup wheat flour. Gluten-Free Mix III 1/4 cup rice flour 1/4 cup tapioca flour 1/4 cup cornstarch 1/4 cup potato flour (not starch) Directions: Mix together. 1-cup equals 1-cup wheat flour.
