Re:Making Vegan Pancakes-Can anyone help?

Hi All

 

I'm attempting to make some vegan pancakes so bought

some Buckwheat Pancake Mix (so far so good).

 

Under the instructions for Milk and Egg Pancakes it

refers to mixing the pancake mix with 'melted or

liquid shortening'. Not being much of a cook at the

best of times i have no idea what melted or liquid

shortening is.

 

Suffice to say my first attempt at making pancakes has

ended in complete failure.

I wondered if anyone could point me in the right

decision.

First question is where are you? I could give you my favourite pancake recipe, but if you're in the US, you would get very confused as pancakes in the UK are very different to pancakes in the US! If you're in the UK, then I'll sort out the recipe I use and post it....

Hi Linda

 

I would abandon the pancake mix. Pancakes are fairly straightforward.

Hopefully Peter will answer this as he is a pancake wizard and has thrown

many a pancake party with great success :-)

Well Jo i don't want to waste the mix.

I'd rather use it this time and then next time i'm

making pancakes i can have a bit of a rethink.

Hi Linda

 

OK then - here goes

 

Pancake Recipe (adapted from Eva Batts Vegan Cooking)...

 

To make 8 pancakes:

 

1 fl oz soya milk

4 1/2 oz flour

3 rounded tablespoons soya flour

(some people put a pinch of salt in, but I prefer it without).

 

Basically, stick all the ingredients into a blender, and whizz them up until

you have a thin but smooth batter (if you don't have a blender, just mix

them by hand - that's what I do).

 

Fry in a frying pan (with a little oil to stop them sticking)...

 

Yep, it's really that simple - 3 ingredients mixed up and fried - no need

for any pre-made batter. I personally like them with either lemon juice &

sugar, or soya ice cream & maple syrup... but you can add pretty much

anything you think might work :-)

I suppose i expected it to be far more complicated

than that for some reason.

 

Peter as i don't want to waste the pre-made batter i

bought what's the best way to use this up.

vegetable shortening

do you have things like crisco on that side of the pond?

I've never used pancake batter - I really have no idea, but maybe someone

else here will! I also don't know what shortening is... nearest I can think

of is short-bread, but I'm pretty sure you wouldn't be using that in

pancakes! Sorry :-)

what happened to the pancakes when you made them?

 

I have been wanting to make some vegan pancakes that I found in one of Sarah Kramer's books but haven't yet. I don't want to make the same mistakes.

that is a staple in Arkansas. We use it all the time but since I moved to New Jersey I noticed nobody uses it up here.

Is shortening just another term for cooking fat? If it is hydrogenated it is terribly bad for you. So check whether it is or not before you use it again.

Oh I don't use it but my mother and her family use it.

 

My mother was one out of 16 kids and they were really poor and that stuff was cheap so they always had it. That is why they still use it today. I find it looks really gross plus it makes me sick to look at it.

I'm sad to say Tara that it just turned into a gooey

mess.I of course didn't add liquid shortening as it

said on the packet.

This is because i never knew what it was.

Now i know what it is i definitely won't be using it

as it's very bad for you.

My mum and dad used to cook pastry with a mixture of lard and white vegetable fat :-[ Yuk.

Oh I don't use it but my mother and her family use it.

 

My mother was one out of 16 kids and they were really poor and that stuff was cheap so they always had it. That is why they still use it today. I find it looks really gross plus it makes me sick to look at it.

If it is hydrogenated it is terribly bad for you. So check whether it is or not before you use it again.

I lived in NJ for 2 months – and it was a total culture
