Mustard seeds are great for indian foods and traditionally play a large part (together with mustard oil ) in Bangeladeshi food, they come in either black or brown which are slightly larger. They are widely available at Indian shops or some health food shops that sell spices. To use them, you should fry some onions first and then add the seeds until they pop in the heat, then add whatever you are cooking in your curry ( garlic/ginger, ground spices - then vegies/beans-pulses/whatever ). They dont add as much heat as the oil, but do add some.
