I'm allergic to soy, too, and it drives me nuts to see so many GF recipes that call for soy-this and soy-that. Plenty of GF folks are soy-intolerant. Also, for breads, when using kanten flakes to sub for gelatin in conventional GF bread recipes, what is the ratio? I know the ratio when *gelling*, but that's a very different use than binding.
