I've been enjoying lentil soups with sweet potatoes and with winter squash (especially kabocha and buttercup). Garbanzos are wonderful in tomato-based soups with lots of garlic. Guest guest Posted February 26, 2007 Report Share Posted February 26, 2007 Greek Lentil Stew (das) Serves 8 to 10 · 1 carrot · 1 onion · l large leek · 2 cup sweet corn (2 cobs) · 2 cup chopped tomatoes · 2 tablespoons olive oil · 2 1/2 cup dry lentils · 8 cups water or light vegetable stock ( I use 5 cups vegie stock & the rest water) · whole garlic gloves · 2 teaspoons salt · 1/2 cup balsamic vinegar Finely chop carrot, onion and leek. Remove corn off cob is using fresh corn. Saute onions, leek, and carrots in olive oil 3 minutes then add corn and tomatoes and saute on low heat around 5 minutes. Mix in lentils then add the water or vegetable stock, whole garlic gloves and salt, simmer on low heat 45 minutes stirring occasionally. Season at the end with the vinegar. I see in the near future a crisis approaching that unnerves me and causes me to tremble for the safety of my country. It's a month or so before it's warm enough to plant tomatoes here, but I've already planted two of them in walls-o-water (a cylinder of water-filled tubes that keeps the air and soil warm enough for the tomato seedling to survive outdoors). Last year I tried bubble wrap, but it didn't warm the soil. A fellow community gardener used walls-o-water and had tomatoes a month before I did, so I'm hoping to pick tomatoes in June this year... It's a month or so before it's warm enough to plant tomatoes here, but I've already planted two of them in walls-o-water (a cylinder of water-filled tubes that keeps the air and soil warm enough for the tomato seedling to survive outdoors). Last year I tried bubble wrap, but it didn't warm the soil. A fellow community gardener used walls-o-water and had tomatoes a month before I did, so I'm hoping to pick tomatoes in June this year... Even when they are over here they aint as good as tinned...............
