frustration!

Bless your heart, Leah! I have been trying to think how I could reply

to this and give you some good, solid ideas. I read it hours ago and

since then, it and you have been on my mind. It sounds like you are

between a rock and a hard place, for sure. For half the week, you have

little to no time to do anything. Before I would even attempt to make

any suggestions, I would want to know what you are eating besides the

apples, oranges, bananas, fruit rollups, and pineapple. Can you give

us that info?

Thanks for thinking this over for me.

I try to eat a variety, when time permits. My backup plan is that I keep a

bag of raw almonds in my desk at work. If I end up working through lunch, I can

always eat 20 almonds. There is a restraunt called Fit Cafe not to far from the

office, its mostly stuff I don't eat but they do have a tangy asian chicken wrap

that I get (minus the chicken) Its really a veggie wrap with a wonderful

assortment of greens and the asian dressing. (its a sesame oil dressing.)

 

Generally, breakfast and snacks are all fruit and I make it a point to

maintain that each day until atleast noon. I would like lunch to be all veggie

(aka salad) but time can be the problem. An alternate when I make time is to

mash an avacado with salsa and eat with raw veggie crackers. (home made).

Evening meal on non school nights is veggies again. Because of the season its

been alot of asparagus lately. Zucchini, squash, onions, sweet corn, broccoli,

cauliflower. Or a salad of mixed greens. Its probably sad to say, but some

times its just munching on purple cabbage while I am doing some thing else.... a

RARE occurance is a few red potatoes sliced and slightly steamed.

 

I think I might have said in the original post that on school nights I have

been taking a huge bowl of cut pineapple for the evening meal.

 

Week-ends are a whole different story! I have plenty of time, so that is when

I try new things, do most of my uncooking and play with the juicer. For

instance this week-end I plan on trying the famous cashew cheese and try my hand

at making a raw granola or trail mix. I don't know if this is " right " or not,

but I tend to chop a couple of days worth of veggies on Sunday night so that I

can get atleast part way into the week .... but I don't know if that reduces the

enzymes or not.

I am with Tommie - you are on my mind too - I wanna help.

My first thoughts are to have you make about 4 salads on Sunday to prepare

for

the week. (salads - like broccoli, raisins, onions, etc AND soaked barley,

tomatoes,

onions, bell peppers with apple cider vinegar, etc AND salads that are bulky

and

filling and tastes great to you.) Buy enough avocados for the week and a

bag of

spinach. Each morning - put spinach in the container topped with the salad

and

throw in your avocado to cut up later. You can take your fruit and nuts

other things for

snacks in between.

 

I have such a busy schedule myself and if I make up 4 salads on Sunday -I am

ready for the week ahead of me.

 

But I am with Tommie - what else DO YOU EAT??

Leah,

 

You could make up raw crackers that have a lot of veggies and greens in

them to take with you. You can also make up some veggie jerky with

sweet potatoes, zucchini, squash, red peppers, radishes and any other

veggie you want to dehydrate. I will be traveling for a few weeks and

am making up a wide assortment of crackers to take along for those

times when I can't find fresh or don't have the time. You could also

dehydrate some fruits to keep in your purse or bag for emergencies.

In light of what you have said, I can only tell you what I do/would

do. I eat lots of bananas, as everyone knows. I have at least six a

day if not more. The tropical fruits are the ones that give you the

most calories. Mangos are great and do well in a container. I know

you say you haven't developed a taste for green smoothies but this

would be the time to do it if at all possible. If you can get organic

romaine, use the outer leaves with three or four bananas and have it

equal a quart after it's blended with a little water. Bananas and

spinach make a good smoothie, too. That could be breakfast. Drink it

ASAP after making it. Bananas are a good portable food in themselves.

I have fruit all day and my veggies in the evening. For myself, I can

eat some pineapple but it tends to burn my mouth after awhile. I like

to eat a huge salad in the evening. It might be easier for you to

pack the salad and a nut or avocado dressing than to take the

pineapple. Can you get good salad mix? That would simplify the salad.

I try to get LOTS of greens in my diet which also keep my vitamin and

mineral intake at a good level. Be sure to get enough calories from

fruit (apples don't have many but they satisfy the need for crunch).

Dates would be another option for a high calorie loads of energy

snack. As you can see, I'm not big on the recipes. They tend to take

a lot of time to prepare and aren't really that nourishing. Once the

moisture is taken out of the food, the vitamins suffer. Be a pack

mule! That will make two of us!
