I know some roots have to be partially cooked before eaten, but I am not sure if beats are one of them. Guest guest Posted July 19, 2007 Report Share Posted July 19, 2007  Speaking of beets making everything red....... at our Farmers Market, there are also white, pink/target beets otherwise known as chioggia, and gold beets. The others don't color everything around them. I like the flavor of the others better than red. They are a bit milder. I don't think I will do that again.
