Guest guest Posted March 24, 2000 Report Share Posted March 24, 2000 * Exported from MasterCook * Vegetable Mornay Casserole Recipe By :366 Simply Delicious Dairy-Free Recipes - Robin Robertson Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups coarsely chopped broccoli florets 1 1/2 cups coarsely chopped cauliflower 2 carrots -- thinly sliced 3 tablespoons corn oil 2 tablespoons minced scallions salt and freshly ground pepper 2 tablespoons cornstarch 2 cups almond milk 2 tablespoons white miso paste 2 tablespoons dry white wine 1/8 teaspoon cayenne 1/8 teaspoon nutmeg 1 cup dried bread crumbs 1 cup grated soy Parmesan (optional) Combine the broccoli, cauliflower, and carrots in a saucepan with salted water to cover and bring to a boil over high heat. Reduce the heat to medium and simmer2 minutes. Add the zucchini and simmer until the vegetables are crisp-tender, about 2 minutes. Drain well, and reserve the vegetables in a bowl. In a small skillet, heat 1 tablespoon of the oil over medium heat, add the scallion and cook 2 minutes until softened. Stir the scallion into the vegetables, and season with salt and pepper to taste. Dissolve the cornstarch in the almond milk and heat in a saucepan over medium heat, stirring to thicken, about 2 minutes. Reduce the heat to low. Stir in the miso, wiine, cayenne, nutmeg, and salt to taste and simmer, stirring, 5 minutes. Reserve. Preheat the oven to 350F. Lightly oil a baking dish or coat with nonstick cooking spray and spread the vegetables evenly in the prepared dish. Pour the sauce over the vegetables. In a small bowl, combine the bread crumbs with the remaining 2 tablespoons oil and toss to combine with a fork. Sprinkle the bread crumb mixture over the casserole. Bake the casserole 30 minutes or until heated through. Sprinkle with soy Parmesan, if using.
