Lightly oil a 9-inch cake pan or coat with nonstick cooking spray, and set aside. Combine the tofu, sugar, oil, tahini, and apple juice in a food processor; reserve. Sift together the flour, baking powder, cinnamon, cardamon, allspice, and salt in a bowl. Add the blended wet ingredients to the dry ingredients and foold in the apple. Mix well. Pour the batter into the prepared pan and bake for 50 minutes, or until a toothpick comes out clean. Place on a rack to cool.
