Apple-Tahini Cake

1 cup soft silken tofu -- well drained

1 cup sugar (or a natural sweetener)

1/4 cup corn oil

1/4 cup tahini

1/4 cup apple juice

3 cups unbleached all-purpose flour

1 tablespoon baking powder

1 teaspoon cinnamon

1/2 teaspoon ground cardamom

1/2 teaspoon ground allspice

1/4 teaspoon salt

1 cup chopped peeled apple

 

Preheat the oven to 350 degrees. Lightly oil a 9-inch cake pan or coat with

nonstick cooking spray, and set aside. Combine the tofu, sugar, oil, tahini,

and apple juice in a food processor; reserve. Sift together the flour, baking

powder, cinnamon, cardamon, allspice, and salt in a bowl. Add the blended wet

ingredients to the dry ingredients and foold in the apple. Mix well. Pour the

batter into the prepared pan and bake for 50 minutes, or until a toothpick comes

out clean. Place on a rack to cool.
