I read, just the other day, that Anasazi beans contain 75% less of the gas-causing components of other beans. I don't know how available they are elsewhere, but they grow in my state so I can get them at any supermarket. They are about the size of pinto beans, with mottled purple and white markings. (They cook up white-bean color, though). I just bought some, Saturday, and I think I'll combine them with this method and see if I've cooked beans that no one has to worry about eating. Wouldn't that be nice?
