Cholesterol-Free Hollandaise Sauce

1 cup soy milk

2 tablespoons corn oil

1/4 teaspoon sea salt

1 tablespoon kudzu or cornstarch -- dissolved in 2 tablespoons water

1 tablespoon lemon juice

paprika or ground nutmeg, for garnish

 

Combine the soy milk, oil, salt, and kudzu or cornstarch mixture in a saucepan.

Simmer for 3 to 5 minutes, stirring constantly with wire whisk, until mixture

becomes thick.

Add lemon juice to sauce, then pour over hot food. Garnish with paprika or

nutmeg.

Recipe calls for Edensoy Original Organic Soy Milk and Eden Foods is credited

with this recipe.
