Guest guest Posted April 19, 2000 Report Share Posted April 19, 2000 * Exported from MasterCook * Tempeh in Brown Gravy Recipe By :Soy of Cooking - Marie Oser Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 cup chopped red onion 6 cloves garlic -- minced 1 rib celery -- sliced 2 1/2 cups sliced carrots 8 ounces seasoned tempeh -- cubed 3 ounces fresh shiitake mushrooms -- sliced 3 tablespoons whole wheat flour 1 1/3 cups beef-flavored vegetable broth -- hot 1/4 cup white wine 2 tablespoons tamari soy sauce 1 cup frozen peas -- thawed 1/2 teaspoon dried thyme Heat olive oil in a 4-quart saucepan over medium-high heat. Add the next 3 ingredients; cook and stir 2 minutes. Add the carrots, and cook 3 minutes. Add the tempeh, and saute 5 minutes. Add mushrooms, and continue to cook 3 minutes. Sprinkle with flour; stir to coat. Pour hot broth over the mixture, and stir until thickened. Stir in wine and remaining ingredients. Simmer 10 minutes or until ready to serve. Seasoned Tempeh Some cooks like to steam tempeh before use, but I've found that seasoning tempeh before usiing it in a recipe enhances the flavor and texture. This recipe will provide enough tempeh for use in 2 to 4 recipes. It will keep for up to a week in the refrigerator. 8 servings 2 8 oz pkgs soy tempeh 3 1/2 cups water 2 tablespoons tamari 1 piece of kombu, cut in two Divide each 8-ounce block of tempeh into 2 or 4 pieces. Place in a medium saucepan with remaining ingredients. Bring to a boil; reduce heat. Simmer about 30 to 45 minutes or until tempeh is fragrant and liquid is almost absorbed. As it simmers, gently rotate tempeh from time to timme so it's equally submerged. Cool slightly. Cover, and refrigerate. Seasoned Tempeh can be used with any tempeh recipe.
