Ziti With Fresh Spinach

 

Recipe By :Vegetarian Homestyle Cooking

Serving Size : 4 Preparation Time :0:15

Amount Measure Ingredient -- Preparation Method

12 ounces uncooked ziti -- (6 cups cooked)

2 large cloves garlic -- minced

2 teaspoons olive oil

1 1/2 cups vegetable broth

3 cups fresh spinach -- washed & chopped

1 tablespoon flour

2 teaspoons lemon juice

1/2 teaspoon thyme

1/2 teaspoon salt

1 dash pepper

 

Put water on to boil for the ziti and cook separately.

 

In a skillet, saute garlic in the hot oil for a minute. Add broth and spinach.

While the spinach is cooking, thicken the broth by sprinkling flour over the

mixture and stirring well to avoid clumping. Add remaining ingredients,

stirring to thicken. Add the cooked and drained pasta; serve immediately.

Ziti is just a type of pasta -- readily available at most regular

supermarkets. I believe it is a short tubular pasta. Someone correct me

if I'm wrong -- I'm in a rush and suffering from " brain fade " .

Yep, you're right!

 

You can usually substitute penne (smaller) or rigatoni (larger) in most

recipes. (I buy what's on sale!)
