Guest guest Posted April 28, 2000 Report Share Posted April 28, 2000 * Exported from MasterCook * Ziti With Fresh Spinach Recipe By :Vegetarian Homestyle Cooking Serving Size : 4 Preparation Time :0:15 Categories : Vegetarian Homestyle Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces uncooked ziti -- (6 cups cooked) 2 large cloves garlic -- minced 2 teaspoons olive oil 1 1/2 cups vegetable broth 3 cups fresh spinach -- washed & chopped 1 tablespoon flour 2 teaspoons lemon juice 1/2 teaspoon thyme 1/2 teaspoon salt 1 dash pepper Put water on to boil for the ziti and cook separately. In a skillet, saute garlic in the hot oil for a minute. Add broth and spinach. While the spinach is cooking, thicken the broth by sprinkling flour over the mixture and stirring well to avoid clumping. Add remaining ingredients, stirring to thicken. Add the cooked and drained pasta; serve immediately.
