Guest guest Posted May 3, 2000 Report Share Posted May 3, 2000 * Exported from MasterCook * Broccoli-Garbanzo Bean Salad Recipe By : Cooking Light. 1988 Serving Size : 6 Preparation Time :0:00 Categories : Beans Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 (19-oz) can garbanzo beans 1/4 cup red wine vinegar -- with garlic 1/4 cup water 1 tablespoon vegetable oil 1 teaspoon dried whole oregano 1/2 teaspoon dried whole basil 1/4 teaspoon dried whole tarragon 1/4 teaspoon pepper Dash red pepper 1/2 pound cherry tomatoes -- halved 3 green onions with tops -- chopped 2 1/2 cups broccoli flowerets Place garbanzo beans in a colander, and rinse under cold tap water 1 minute, set colander aside to let beans drain 1 minute. Combine vinegar and next 7 ingredients. Stirring well, set aside. Combine reserved beans, tomatoes, and green onions; toss gently. Add reserved dressing mixture, and toss lightly to coat well. Cover and chill 2 hours. Add broccoli, tossing gently. Cover and chill 30 minutes.
