Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon extra virgin olive oil 1/2 small onion -- diced 2 large garlic clove -- minced 2 3/4 cups water OR low-sodium vegetable broth 1/2 teaspoon salt -- (optional) 2 3/4 cups small diced vegetables of choice (suggested: red bell pepper or carrots or zucchini or yellow squash) 10 ounces couscous 1/3 cup chopped fresh herb -- (s) of choice (suggested: parsley or oregano or basil) Heat a large saucepan over medium heat; add oil. Add onions and garlic; saut‚ until onions are translucent. Do not brown onions or garlic. Add water (and or broth), salt (if using), and small diced vegetables; bring to boil over high heat. Stir in couscous and fresh herbs; cover and immediately remove from heat. Let stand for 5 minutes; fluff with fork. Adjust seasonings. Enjoy hot or try it cold with a squirt of lemon juice.
