I 've fed them to the skeptics ( without telling them they were anything but normal brownies) and the skeptics- ( boyfriend, family, co-workers - all non veg) all agreed they were great. THEN I told them they were made with black beans- and everyone was shocked.. but they still like em and they would eat them again knowingly..Definately give them a shot! Success!!! Enjoy Jenn Ottawa, Ontario, Canada http://tlotc.dhs.org/jenn/ * Exported from MasterCook * BLACK BEAN BROWNIES Recipe By : Judy <HGPis4me Serving Size : 30 Preparation Time :0:00 Categories : 2 Point Beans And Legumes Desserts Done By Dotties Calculator Meatless Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- nonstick cooking spray 15 ounces black beans, cooked -- 1 can rinsed & drain 6 egg whites or 1/2 cup fat free egg substitute 4 ounces unsweetened chocolate 1 tablespoon reduced-calorie margarine 2 cups sugar 2 tablespoons instant coffee powder -- regular or espresso 3 tablespoons all-purpose flour 1/2 cup -- optional Preheat oven to 350 degrees. Coat a 9 " x13 " pan with nonstick spray. Blend drained beans and 2 egg whites (or 1/3 of 1/2 C egg substitute) in food processor or blender until smooth. Set aside. Place chocolate and reduced calorie margarine in a small microwave safe bowl. Microwave for 60-90 seconds. Stir every 30 seconds until smooth. Set aside. Combine bean puree, sugar, flour, coffee powder and remaining egg whites or egg substitute in a mixing bowl. Beat until well combined. Blend in melted chocolate. Many of you wanted the recipe but I couldn't find my softcopy to email out.. Well- here you go! Try these! These are the only brownies I ever make now. They are wonderful. My only tip is that they tend to come out VERY GOOEY- so much that you alnost can't get them out of the pan without destroying them. Does anyone know what would help? Adding more flour? also- I've found that using the egg beaters is easier than the whites only and that sugar in the raw makes them a little crunchier I love it that way! For anyone else wondering, I made these years ago during a brief Weight Watchers' stint, and they are really very good. I've had to give up gluten so I can't make these anymore. Darn.
