Creole-Style Hummus

Amount Measure Ingredient -- Preparation Method

2 cans Garbanzo Beans (chickpeas) (15 1/2-ounce E --

drained

1/2 cup olive oil

1/2 cup tahini -- (sesame seed paste)*

1/2 cup water

1/4 cup fresh lemon juice

3 garlic cloves

1 teaspoon Creole seasoning blend

1 teaspoon ground cumin

 

Puree all ingredients in processor until smooth. Transfer to bowl.

(Hummus can be made 2 days ahead. Cover and refrigerate.)

 

*Sold at Middle Eastern markets, natural foods stores and some

supermarkets.

 

Makes about 3 3/4 cups.
