Guest guest Posted June 7, 2000 Report Share Posted June 7, 2000 * Exported from MasterCook * Spaghetti Verdura Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 shallots -- minced 1 clove garlic -- minced 3 tablespoons extra virgin olive oil 2 tablespoons dijon mustard 2 zucchini, Italian style -- cut in half lengthwise, sliced 1/2 pound asparagus -- in 1 inch pieces 1 pound spaghetti -- cooked 2 tablespoons scallions or chives -- chopped 1/2 teaspoon pepper Saute shallots and garlic in 1 tablespoon oil until soft, about 5 minutes. Add remaining 2 tablespoons oil and mustard and mix well. Steam or microwave the zucchini and asparagus until crisp tender. Toss the cooked pasta with the dressing to coat, then add vegetables and scallions and toss again. Season with pepper.
