Vegetable Spring Rolls with Hot Mustard Dipping Sauce

Amount Measure Ingredient -- Preparation Method

6 shiitake mushrooms -- chopped

1 cup chopped bok choy

1/4 cup canned bamboo shoots -- chopped

1/4 cup grated carrot

1/4 teaspoon salt

1/8 teaspoon cayenne

1 tablespoon safflower oil

1 tablespoon cornstarch

12 store-bought spring roll wrappers

1 tablespoon all-purpose flour

Safflower oil -- for frying

----Hot Mustard Dipping Sauce----

1 tablespoon chopped fresh ginger

2 cloves garlic

1 tablespoon sugar

3 tablespoons low-sodium tamari

1 tablespoon cider vinegar

2 tablespoons dry mustard

1/4 teaspoon toasted sesame oil

 

 

For the Spring Rolls:

Combine the mushrooms, bok choy, bamboo shoots, carrot, salt and cayenne in a

medium bowl and let stand for 30 minutes.

 

Heat 1 tablespoon safflower oil in a wok or skillet. Add the vegetable mixture

and stir-fry for 2 minutes or until tender. Combine the cornstarch with 2

tablespoons cold water, add to the vegetables in the wok, and cook until

thickened. cool. Divide the filling into 12 portions and place a portion on a

short end of each wrapper. Fold the top edge over. Fold in both ends and roll up

lengthwise into a tight cylinder. Combine the flour with 2 tablespoons cold

eater and use this paste to seal the ends.

 

Heat 1/4 inch depth of oil in a large saucepan until very hot. Fry the spring

rolls, a few at a time, turning until golden brown all over, about 2 minutes.

Drain on a paper towel.

 

For the Hot Mustard Dipping Sauce:

In a food processor, combine the ginger, garlic, and sugar until finely minced.

Add the tamari, vinegar, 4 tablespoons water, mustard, and sesame oil, and blend

for 30 seconds, stopping once to scrape down the sides of the work bowl.
