Guest guest Posted June 14, 2000 Report Share Posted June 14, 2000 * Exported from MasterCook * Toasted Lemon Pound Cake With Ice Cream And Brandied Cherries Recipe By :Hap's at Eagle Bend, Bigfork, MT, Bon Appetit, July 2000 Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup unsalted butter -- room temperature 3/4 cup sugar 3 large eggs 3 1/2 teaspoons finely grated lemon peel 1 tablespoon vanilla extract 3/4 teaspoon salt 1 1/4 cups all purpose flour BRANDIED CHERRIES: 2 pounds fresh cherries -- pitted 1/2 cup sugar cup brandy 2 tablespoons fresh lemon juice vanilla ice cream Preheat oven to 3 75 ° E Lightly butter 8 1/2 x 4 1/2 x 2 3/4-inch metal loaf pan. Using electric mixer, beat 3/4 cup butter and sugar in large bowl until fluffy. Add eggs 1 at a time, beating well after each addition. Beat in lemon peel, vanilla and salt. Gradually add flour, beating until just blended. Transfer batter to prepared loaf pan. Bake 10 minutes. Cook until cherries soften, stirring occasionally, about 6 minutes. Serve warm. Place 1 cake slice on each of 12 plates. Top each slice with warm cherries and a scoop of ice cream and serve.
