Guest guest
I just noticed that the recipe I posted, Rice With Spinach And Feta, uses chicken broth. Sorry, I forgot to change the ingredient to vegetarian chicken broth. I buy my vegetarian chicken broth in dehydrated form from Whole Foods. A one pound bag costs about US $4.95. I think it is expensive, but it lasts me a long time, and it is very convenient. For one cup of broth I add 1 tablespoon of the dried mix to one cup of very hot water. I stick the cellophane bag into a zippered bag and keep it in the freezer section of my refrigerator. Kathleen

I always just mentally change " chicken broth " when I see it to " vegetable broth " because I've had very good results in making that substituion. However, I had no idea there was " vegetarian chicken broth. " I'll look for it next time I'm at Whole Foods. It makes me curious, though, because I'm thinking of products I've seen that have ingredients like " ham flavoring. " I've always wondered if that was vegetarian -- how do they get ham flavor without ham? Again, thanks for the info. Jayni

Guest guest
Jayni: There is a Goya product, can't remember the exact name, that is " ham flavoring " and contains no animal products. Where I live, it is sold in the regular grocery stores in the ethnic/Mexican foods section -- all the Goya products are in one place. It comes in a small box with yellow/orange/brown colors, I think. I've used it before in pinto beans, and it was okay. Keep in mind though, that I've been a vegetarian for 30 years -- most of my life -- with absolutely no desire to eat meat, so my reactions are probably different than someone who hasn't been a vegetarian as long and/or likes or wants meat but just doesn't eat it. Re: The " vegetarian chicken broth " question from Barbara: Whole Foods sells it in a large packet (and veg broth mix too) -- I see Jayni has already provided you with a link to their website. Another product is " McKay's Chicken Style Seasoning " which I can find at my local Seventh Day Adventist store. In addition, Westbrae sells canned versions of " vegetarian chicken broth " as well as " vegetarian beef broth " . I've bought that at Whole Foods too, and they can probably be found at health food stores also. Karen
