Hello from Kiwi lurker - Bulgar & Bean 'Chilli Con Carne'

Hi,

I've been lurking here for quite some time, enjoying the great recipes. I

finally felt the need to go out and buy MC - and am now the proud owner of MC

v.5.0.

This means I get to share some of my favourites. I'm not a full-on vegetarian,

but have been eating this way predominantly for many years. As I'm a kiwi (New

Zealander for those unfamiliar with the term - and thinking that I might be some

sort of furry fruit), some of your ingredients are a bit of a mystery - but my

ex-pat US friends manage to suggest alternatives. Hope this isn't too much off

topic as an introduction - and here's a simple & yummy recipe to start with.

Pour the boiling water over the bulgar. Leave to stand, stirring occasionally,

while preparing the rest of the recipe.

Dice the onions and finely chop the garlic. Heat the oil in a large frying pan

or pot. Saute these until the onion is soft and beginning to turn clear. Stir

in the cumin, oregano and chili powder, and continue to cook for a few minutes.

In a cup, mix together the soy sauce, tomato paste, sugar and hot water. Pour

the resulting puree over the onion mixture. Then stir in the lemon juice, black

pepper and drained, rinsed beans. Add the bulgar and combine well.

Allow to simmer over a low heat for 5-10 minutes, stirring occasionally.

Serve over brown or white rice.

Top with sour cream, spring onions or chives. Accompanied by your favourite

salad or cooked vegetables.
