Hope you enjoy it ! ~Lynn~ * Exported from MasterCook * Cheese and Pumpkin Balls Recipe By :Alison & Simon Holst Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 500 grams pumpkin -- peeled and seeded 2 cloves garlic 1 medium onion 1 tablespoon olive oil 1 teaspoon dried parsley 1/2 teaspoon salt 1/2 cup cheese -- grated 1/2 cup bread crumbs -- dried black pepper -- to taste Coating flour 1 egg -- lightly beaten breadcrumb-sesame seed mix Peel the pumpkin, scoop out its seeds with a spoon, cut into 6-8 pieces and cook until barely tender. It is best steamed or microwaved on high power (5-6 minutes) - as you want it as dry as possible. Crush and chop the garlic. Then saute with the diced onion, in the oil. When the onion is soft and clear, remove from the heat and transfer to a food processor, with the pumpkin. Process until smooth and well mixed. Then add remaining ingredients. The mixture should be thick enough to hold its shape when formed into balls. If not, add extra breadcrumbs. With wet hands form the mixture into golfball sized balls and coat with flour. Next coat each ball with the beaten egg. Then with fine dry breadcrumbs or a mixture of equal parts breadcrumbs and sesame seeds. Refrigerate for 15 minutes or longer, if possible. Deep fry three or four at a time, for about 5 minutes in oil heated to 180 degrees C. Source: " Meals without meat.
