Light Cream of Celery Soup

Amount Measure Ingredient -- Preparation Method

6 stalks celery -- coarsely chopped

6 green onions -- coarsely chopped

3 medium potatoes -- coarsely chopped

1 quart skim milk

1/2 teaspoon salt

teaspoon white pepper

 

Combine all ingredients in a large saucepan. Cook over low heat 30 minutes or

until vegetables are tender, stirring occasionally (do not boil).

 

Pour half of milk mixture into container of electric blender, and process 30

seconds; drain mixture through a sieve into a saucepan. Repeat blending and

straining process with remaining mixture. Cook over low heat until thoroughly

heated. Serve hot or cold. Yield: 4 cups (about 188 calories per 1-cup

serving).
