" Fried " Green Tomatoes

Amount Measure Ingredient -- Preparation Method

1/2 cup yellow cornmeal

1/2 cup unbleached flour

1/2 teaspoon salt

1/2 teaspoon black pepper

4 large green tomatoes -- horizontally cut into 1/2-inch thick

slices

Grated parmesan (soy) cheese -- optional

 

Preheat oven to 400 degrees. Combine cornmeal, flour, salt, and pepper in a

flat dish; set aside. Lightly coat a baking sheet with vegetable oil spray; set

aside.

 

Dip each tomato slice in cool water, then dredge thoroughly in cornmeal-flour

mixture. Place in a single layer on baking sheet. Bake 15 minutes, turn

slices, sprinkle with soy parmesan if desired, and bake another 5 minutes.

Serve immediately.

NOTES : In the South, green tomatoes are traditionally fried in lard or bacon

grease. But as this version proves, you can get excellent results without

frying.
