Brown Beans Swedish Style

Amount Measure Ingredient -- Preparation Method

1 pound Idaho or Swedish beans -- dried

1/3 cup white vinegar

1/3 cup molasses

1 teaspoon salt

1/3 cup heavy cream (optional)

 

Bring 6 cups water to a boil in kettle or dutch oven. Add washed beans and

boil 2 minutes.

 

Cover, remove from heat and let stand 1 hur. Drain and put in cooker with 1

cup water, vinegar, molasses and salt.

 

Cover and cook on low 10 to 12 hours, or High 6 hours. Stir occasionally.

 

Stir in cream or water if too thick. Beans will have a mild sweet and sour

taste.

I'm sorry, but I'm not familiar with either Swedish or Idaho beans; is there

another name for them?
