Phoebe's Warm White Bean Puree

Amount Measure Ingredient -- Preparation Method

1 medium clove garlic -- minced

3 tablespoons extra virgin olive oil

1/2 teaspoon fresh rosemary leaves

4 cups cooked cannelini beans -- (or 2 19 oz cans) rinsed &

drained

salt & pepper

 

In a medium skillet or saucepan, bring 1/4 cup of water, garlic, olive oil, and

rosemary to a simmer over medium heat. Simmer 1 minute. Stir in the beans.

Continue to cook, stirring frequently, until the bean mixture is heated through.

Remove from heat.

 

Mash the warm beans into a chunky puree with the tines of a fork or pulse in a

food processor until coarsely pureed.

 

Transfer to a bowl. Season with salt & pepper to taste.
