I try not to indulge in sweets because of the fat content, but these have

been calling me ever since they were in the newspaper a few days ago. I

guess I need to make them for the office, just so I can try one, only

one. (Just one...just one...just one........) Kathleen

Amount Measure Ingredient -- Preparation Method

4 cups uncooked quick-cooking oatmeal

1/2 cup butter or margarine -- melted, plus

2 tablespoons butter or margarine -- melted

(total of 1 1/4 sticks)

1/3 cup light corn syrup

2 teaspoons vanilla

1 cup packed brown sugar

1 cup peanut butter -- divided

(smooth or crunchy)

1 cup semisweet chocolate chips -- (6 oz.)

1 cup salted peanuts

 

Makes 32 small bars.

 

Preheat the oven to 375 degrees. Grease a 9-by 13-inch pan.

 

In a large bowl, combine the oatmeal, melted butter, corn syrup, vanilla,

brown sugar and 1/4 cup of the peanut butter. Mix well. Pour the mixture

into the prepared pan and, using waxed paper, plastic wrap or foil to keep

your hands from sticking, press it into an even layer. Bake 10 to 12 minutes.

 

Meanwhile, melt the chocolate chips in a small saucepan over very low heat,

stirring occasionally, or in the microwave oven, stirring

occasionally. Stir in the remaining 3/4 cup of peanut butter and the

salted peanuts. Allow the baked layer to cool for a few minutes, then pour

and spread the chocolate/ peanut mixture over it.

 

Put the pan in the refrigerator to set the bottom layer. Cut into small

bars and serve. Keep refrigerated.

 

Nutrition information per 1 bar serving: Calories 206, Carbohydrates 22 g,

Protein 5 g, Fat 12 g, including sat. fat 4 g, Cholesterol 10 mg, Sodium

87 mg, Calcium 22 mg, Dietary fiber 2 g.

 

Diabetic exchanges per serving: 1 1/2 bread/ starch exch., and 2 1/2 fat exch.
