Guest guest Posted July 18, 2000 Report Share Posted July 18, 2000 * Exported from MasterCook * Caribbean Tempeh Recipe By :Jenny Stacey Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- salt & Pepper 1 medium lime -- juice & zest tempeh cubes 1 tablespoon olive oil 1 medium red onion -- halved and sliced 4 cloves garlic -- peeled and crushed 2 teaspoons fresh ginger -- grated 1 medium red chile pepper -- chopped 2 large tomatoes -- seeded & chopped 1 cup sweet potato -- peeled and chopped 1 medium ripe plantain -- peeled & chopped 2 1/2 cups stock, vegetarian 1 stick cinnamon 1 cup rice, raw 2 tablespoons butter or non-flavored oil 2 tablespoons light brown sugar 1 small pineapple -- cored and cut into 16 wedges fresh parsley garnish -- chopped Roll tempeh cubes in lime juice and zest. Sprinkle with salt and pepper. Heat oil in base of steamer and saute tempeh 3 to 4 minutes, turning until sealed. Add onion, garlic, ginger and chile pepper, cook 2 more minutes. Stir in tomatoes, potatoes, plantain, stock and cinnamon. Cover and cook 20 minutes but first read rest of recipe. Meanwhile, boil rice for 15 minutes and drain well. Line steamer top with a clean damp dishtowel and spoon in the rice. Cover with the lid and cook another 15 minutes with the rest of the ingredients in the 4th line of directions. Melt butter or oil in skillet with sugar and add pineapple. Cook for 5 minutes, turning until hot and coated in syrup. Be careful not to burn it. Spoon rice onto a warm serving plate and top with the vegetable mixture. Serve with the hot pinapple and garnish with parsley. Description: " Has hot pineapple garnish. This is an adapted recipe.
