Guest guest Posted July 24, 2000 Report Share Posted July 24, 2000 * Exported from MasterCook * Chewy Coconut-Butterscotch Bars Recipe By :Cooking Light, June 2000 Serving Size : 16 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Cooking spray 1 1/4 cups all-purpose flour 1 1/4 teaspoons baking powder 1/8 teaspoon salt 1 cup packed dark brown sugar 3 tablespoons vegetable oil 1 teaspoon vanilla extract 1 large egg 1 large egg white 1/3 cup chopped pitted dates 1/4 cup flaked sweetened coconut 2 tablespoons semisweet chocolate minichips 2 tablespoons butterscotch morsels 1. Preheat oven to 350°. 2. Coat the bottom of an 8-inch square baking pan with cooking spray (do not coat sides of pan). 3. Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, baking powder, and salt in a bowl Combine sugar, oil, vanilla, egg, and egg white in a large bowl; stir with a whisk until well-blended. Add the flour mixture and dates; stir just until blended. Spread batter in bottom of prepared pan. Bake at 350° for 15 minutes; remove From oven. Combine coconut, minichips, and butterscotch morsels; sprinkle coconut mixture over brownies Bake an additional 10 minutes or until a wooden pick inserted in center comes out almost clean, cool on a wire rack. Yield: 16 servings (serving size: 1 brownie).
