My request is for some sort of Mexican type tofu recipe. My hubby looked

at me as if I was insane when I came home the other day with 3 boxes of

tofu. I'm determined to like this stuff, LOL. We love mexican food and I

was hoping I could make a mexican tofu recipe without him even knowing

<smile> Will some of you help me out please :)

hi Ell ... i'm really not a great one for recipes (and never post them

b/c i don't have mc) but i thought i'd say hi back and offer something

if you guys like guacamole (and who doesn't?!) if you bought silken

tofu, then you can easily disguise it in guacamole - this also makes the

guac go further (great for parties) when avocados are expensive ... we

make ours by mashing silken tofu with a nicely ripe avocado, a clove or

two of minced garlic, a few shakes of cumin and some fresh lime juice

(probably less than one lime, depending on how hard you squeeze!) a

little salt & pepper ... if your seasonings are right, and the avocado

ripe, you shouldn't even know there's tofu in it (trust me, i've fooled

many)

sorry i don't have any tried and true burritos or anything but i know

there's been some posted in the past

Here is a good lasagna recipe with tofu from the archives of this list, and

I've made it a few times. You did not tell us if you bought silken tofu or

regular tofu. This uses regular tofu.

Categories : Main Dishes, Vegetarian Pasta, Couscous, Etc.

Soyfoods Vegetables

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

26 ounces pasta sauce

8 oz no-boil lasagna noodles

16 ounces soft tofu -- well drained

and mashed with fork until smooth

3 cups cut-up fresh cooked vegetables

such as broccoli or cauliflower

zucchini and/or spinach

8 oz part-skim shredded mozzarella cheese -- (2 cups)

OR mozzarella-style soy cheese

 

8 TO 10 KID-SIZE SERVINGS LACTO

 

I used to consider lasagna labor-intensive until no-boil noodles came to

the rescue. Serve this delicious version with fresh Italian bread and a

big salad. For best results, choose a good-quality natural pasta sauce.

 

Preheat oven to 350ø F. Spread thin layer of sauce over bottom of 13 x

9-inch glass or ceramic baking pan. Top with layer of 3 or 4 lasagna

noodles. Gently spread one-third of mashed tofu over noodles, then top

with one-third of remaining sauce.

 

Sprinkle about one-third of vegetables over sauce, then top with one-third

of cheese. Repeat layering twice, beginning with noodles and ending with

cheese. Cover with foil and bake until noodles are tender, 35 to 40

minutes. If desired, uncover and continue baking until cheese is golden,

about 5 minutes. Remove from oven and let stand 5 minutes before serving.

 

PER SERVING: 206 CALORIES; 14G PROTEIN; 8G TOTAL FAT; (3G SAT, FAT) 21G

CARBOHYDRATE; 15G CHOLESTEROL; 766MG SODIUM; 2G FIBER

You can replace the oft-used sour cream with some of the following.

***TOFU SOUR CREAM 1***

1 pound silken tofu

1/3 cup vegetable oil

2 tablespoons lemon juice

1 teaspoon salt

***TOFU SOUR CREAM 2***

1/4 cup fresh lemon juice

1 tablespoon light miso

1/4 teaspoon dijon mustard

2 tablespoons water

1 tablespoon tamari

1/2 pound tofu

***TOFU SOUR CREAM 3***

1/4 cup silken tofu -- patted dry

1/4 cup firm tofu -- patted dry

1 tablespoon lemon juice

1 tablespoon tamari

 

Blend all ingredients in processor until creamy.

Blend all ingredients until smooth and creamy. Use as a replacement

for dairy sour cream.

Hello Ell,

 

I truly feel like you do. I too am not a vegetarian/vegan yet, but I am

eating better and healthier. I joined the list to learn, grow, and find

better ways in which to eat. However, I cannot seem to get my husband to

understand my feelings regarding this change. He does not seem to

comprehend that I wish to eat healthier and wiser, and I cannot allow myself

to eat meat when they do such disgusting things to achieve the " FINAL

PRODUCT. "

 

Since joining the list I have been reading the vegetarian times, as well as

many vegetarian websites, to educate myself further. There are many things

that I need to learn/understand about becoming vegetarian/vegan. I am

constantly looking up definitions to products, via the Food Networks tools,

to get a grasp of what some ingredients are. Unfortunately there are things

that I cannot find, but I am truly determined to seek them out.

 

In my opinion making the step to eat better and eventually become a

vegetarian, eating more natural/organic foods, and cooking on a daily basis

is better than choking on red meat and eating unhealthy fast food meals.

You are taking the first steps in improving your life. I take my hat off

to you and everyone else.
