Guest guest Posted July 28, 2000 Report Share Posted July 28, 2000 hi Ell ... i'm really not a great one for recipes (and never post them b/c i don't have mc) but i thought i'd say hi back and offer something if you guys like guacamole (and who doesn't?!) if you bought silken tofu, then you can easily disguise it in guacamole - this also makes the guac go further (great for parties) when avocados are expensive ... we make ours by mashing silken tofu with a nicely ripe avocado, a clove or two of minced garlic, a few shakes of cumin and some fresh lime juice (probably less than one lime, depending on how hard you squeeze!) a little salt & pepper ... if your seasonings are right, and the avocado ripe, you shouldn't even know there's tofu in it (trust me, i've fooled many) sorry i don't have any tried and true burritos or anything but i know there's been some posted in the past good luck and enjoy! tara Quote Link to comment Share on other sites More sharing options...

Guest guest Posted August 3, 2000 Report Share Posted August 3, 2000 Hello Ell, I truly feel like you do. I too am not a vegetarian/vegan yet, but I am eating better and healthier. I joined the list to learn, grow, and find better ways in which to eat. However, I cannot seem to get my husband to understand my feelings regarding this change. He does not seem to comprehend that I wish to eat healthier and wiser, and I cannot allow myself to eat meat when they do such disgusting things to achieve the " FINAL PRODUCT. " Since joining the list I have been reading the vegetarian times, as well as many vegetarian websites, to educate myself further. There are many things that I need to learn/understand about becoming vegetarian/vegan. I am constantly looking up definitions to products, via the Food Networks tools, to get a grasp of what some ingredients are. Unfortunately there are things that I cannot find, but I am truly determined to seek them out. In my opinion making the step to eat better and eventually become a vegetarian, eating more natural/organic foods, and cooking on a daily basis is better than choking on red meat and eating unhealthy fast food meals. You are taking the first steps in improving your life. I take my hat off to you and everyone else.
