Here is a recipe for elephant ears. Barb was wondering how many points these

would be. Well they are 4 points without counting the oi for frying, add at

least 2 points for the oil and 1 point per tsp of sugar/cinnamon topping, so in

total they'd be about 7 points.

ELEPHANT EARS OR BEAVER TAILS

Amount Measure Ingredient -- Preparation Method

1 envelope dry yeast

1 cup warm water

2 eggs -- beaten

4 cups flour, all-purpose

6 tablespoons sugar

equal parts of sugar and cinnamon -- for topping

 

Soften yeast in warm water. Combine all ingredients except the cinnamon sugar

mix. Mix well. Divide dough into 12 pieces. Let sit 10 minutes. Roll out on a

lightly floured board. Using hands, stretch each piece into circular shape.

Heat vegetable oil in 10 skillet (cast iron is best). Place each circle of

dough in the hot grease. Turn once - the surface will bubble and blister and

should be lightly browned. Turn with spatula and broad knife. Place on

absorbent paper toweling. Sprinkle immediately with mix of sugar and cinnamon.

If you tear a hole in the circle as it is being stretched that will not matter.

 

JOANN'S NOTE: This will be a favorite for all ages. The recipe has been around

a long time, but each time we make them someone has never heard of individuals

making them.

 

JENN'S NOTE: Elephant ears are commonly called Beaver Tails in Canada :)

Hi, Jennifer

This is a wonderful recipe and I am sure my grandson would love them! But I

don't understand the sentence:

Heat vegetable oil in 10 skillet (cast iron is best)

Are the Elephant ears deep- or shallow-fried?

The beavertails up here are deepfried ( and then turned once) so I don't

think it matters as long as they are fried on both sides
