Creamy Coleslaw

***CREAMY TOFU DRESSING***

3/4 cup soft tofu

1/4 cup cider vinegar

1 tablespoon plus 1 teaspoon honey

1 teaspoon prepared horseradish

1/2 teaspoon celery seed

1/2 teaspoon salt

1/4 teaspoon pepper

8 cups packaged coleslaw mix

 

SERVES 8

 

Packaged coleslaw mix, available in many supermarket produce sections,

makes it easy to whip up a quick slaw. Of course you can also slice your

own red and white cabbage and grate some carrots to make the 8 cups of

undressed slaw mix you need for this recipe. The tangy dressing rakes only

a moment to make. Like most slaws, this one improves with an hour's rest.

 

Combine all dressing ingredients in a food processor or blender and blend

until smooth.

 

Toss dressing with coleslaw in a large bowl. Refrigerate at least 1 hour

before serving.

 

TIP: You can also use Creamy Tofu Dressing on steamed broccoli,

cauliflower, or green beans, or drizzled over salad greens.

 

Serving size: 1 cup slaw, 1/4 of the dressing. Calories: 63, Fat: 1.9 g,

Cholesterol: 0 mg, Carbohydrate: 82g, Protein: 4.0 g, Sodium: 253.0 mg.
