Of course you can also slice your own red and white cabbage and grate some carrots to make the 8 cups of undressed slaw mix you need for this recipe. The tangy dressing rakes only a moment to make. Like most slaws, this one improves with an hour's rest. Combine all dressing ingredients in a food processor or blender and blend until smooth. Toss dressing with coleslaw in a large bowl. Refrigerate at least 1 hour before serving. TIP: You can also use Creamy Tofu Dressing on steamed broccoli, cauliflower, or green beans, or drizzled over salad greens. Serving size: 1 cup slaw, 1/4 of the dressing.
